We know that it’s Thanksgiving and that it’s getting colder outside. However, that doesn’t mean you will see me eating turkey and stew every day. Instead, today’s suggestion for a light lunch/dinner is all pretty colors and Asian flavors.

The spicy edamame with chile salt is from our queen, Martha Stewart. It’s super easy and quick to make.

I have to admit that I improvised for the cucumber salad based on a delicious dish I buy at my local dumpling shop. However, what I ended up with is very similar to this recipe from Kirbie’s craving (I only omitted the sugar).
